Bone is living tissue that is constantly being broken down and rebuilt. It forms the framework of our bodies. Most of the mass of bone tissue is comprised of bone matrix - a combination of organic and inorganic substances.

The organic matter in bone matrix is made up mostly of collagen while the inorganic matter is made up mostly of a type of calcium called MCHA, or microcrystalline hydroxyapatite. In addition, bone matrix also contains phosphorous, growth factors, glycosaminoglycans and a broad range of other trace elements.

Filling the cavities of bones is the soft, gelatinous substance known as bone marrow. It is a nutrient dense and energy rich whole food, containing a high content of healthy essential fats, collagen and minerals.

Red bone marrow has a rich blood supply and contains hemopoietic stem cells, which produce red blood cells, white blood cells, and platelets. The red coloration comes from the presence of hemoglobin in red blood cells.

Yellow marrow contains stromal stem cells, which produces fat cells, cartilage and bones. The yellow coloration is due to the high content of fat cells. Yellow bone marrow mainly occurs in the marrow cavity of long bones. It mainly acts as a store of fat cells. The yellow coloration comes from the carotenoids in fat.

The femur bones of New Zealand cattle are split length-wise to access the bone marrow, which is visually inspected for quality. Then the entire bone is freeze dried using a clinical, hygienic process which does not use excessive heat or chemicals. Cold processing maintains the bioactivity of its beneficial nutrients.

All fats have a similar chemical structure: a chain of carbon atoms bonded to hydrogen atoms. What makes one fat different from another are seemingly slight differences in structure which translate into crucial differences in form and function. Bone marrow is comprised of saturated and unsaturated fats.

Saturated fats have single bonds between their molecules. New research suggests that saturated fats are not as bad as once believed. Though the consumption of saturated fats can increase both HDL and LDL, “good” and “bad” cholesterol, recent studies found that there is no link between saturated fat consumption and heart disease. Common sources of saturated fat include meat, dairy and baked goods.

Unsaturated fats contain one or more double or triple bonds between their molecules. Within unsaturated fat, there are two broad categories - monounsaturated (MUFA) and polyunsaturated (PUFA). Monounsaturated and polyunsaturated fats are the healthy fats that can actually improve cholesterol levels, decreasing your risk for cardiovascular disease. Common sources of unsaturated fat are fish, avocado, nuts, seeds and olive oil.

Trans fats are a byproduct of industrial fat production. They result from a process called hydrogenation that is used to turn vegetable oils into solids. Trans fats are extremely unhealthy.
